Spinach & Lentil Tortellini Soup

½ cup dry lentils
2 cups coarsely shredded carrots (I vigorously chopped one cup with my Pampered Chef chopper, and then just cut the remaining cup into slices with varying thickness)
1 large onion (this I chopped up with the PC chopper)
4 oz chopped ham (Canadian bacon is what we used – this was a challenge to find and we only found it in 5 oz packs)
2 cloves garlic (we used 4 – 2 were small and we like garlic)
2 tsp dried basil
1 ½ tsp dried thyme
¼ tsp pepper
5 cups red. sodium chicken broth
1 cup water
9 oz froz. Tortellini
4 cups torn up fresh spinach

1. rinse/drain lentils – pour in 4qt crock pot
2. add carrots
3. add onion
4. add ham
5. add MINCED garlic
6. add spices
7. add broth/water over all and cook on low for (6.5 hours or low for 3.25 hours the book says – we did 6 hours)
8. in the last 30 mins add the tortellini
9. RIGHT before you serve stir in the spinach
